Caper Pasta Salad - Pastéa

INGREDIENTS

  • 400 g Pastéa,
  • 4 tomatoes
  • 2 tbsp. capers
  • 1 red onion
  • about 20 pitted black olives
  • 1 tsp. mustard
  • 1 tsp. vinegar
  • 3 tbsp. olive oil
  • parsley
  • salt and pepper

STEP 1

Cook the pasta for about 10 minutes in a pot of lightly salted boiling water. Drain the pasta and rinse under cold water. Pour into in a bowl.

STEP 2

Wash, seed and cube the tomatoes. Peel and finely slice the onion. Add onion and tomatoes to the pasta in the bowl.

STEP 3

Add the capers and black olives to the bowl. In a small separate bowl, blend the mustard with the vinegar and oil. Season with salt and pepper and pour over the pasta mixture. Stir.

STEP 4

Refrigerate for one hour before serving. Just before serving, sprinkle with parsley.
